since we dont have bamboo here I am always amazed to see it!
Why are the colors different? Is it different species of bamboo put together?
These are all the same spieces, Mousou-chiku(孟宗竹) and very popular one in Kyoto and Japan. The baby one is called Takenoko and we eat it in a various way, from tempura to sliced and grilled one.
I think the color is so different because the green is fresh and young and the yellow is old.
